Generously fruity with a predominance of plums, cherry and bramble fruit flavours. The palate is further enhanced by underlying flavours of Ian Hollick is a terrific Coonawarra producer and his marriage of bubbles and proper, full-bodied Merlot is an absolute winner. Quality fruit is aged in oak to produce an outstanding base wine for this sparkling style.
Hollick Cabernet Sauvignon Merlot – which is also comprised of some Cabernet Franc and Petit Verdot – is vinified in classical Bordelais fashion, but is matured in approximately 30% new French oak hogsheads. Hollick is making classic Coonawarra Cabernet Sauvignon Merlot with highly defined blackcurrant aromas, fine-grained tannins and balance.
In some respects it is something of secret even though it won the coveted Jimmy Watson Trophy in 1985.
